Heirloom Tomato Sandwich

Claire Castleberry of Austin, Texas, makes this sandwich with beautiful heirloom tomatoes from the farmers’ market.

  • 1 (3-ounce) package cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 tablespoons chopped fresh dill
  • 1⁄4 teaspoon garlic powder
  • 8 slices white sandwich bread
  • 1 large red heirloom tomato, cut into 1⁄4-inch-thick slices
  • 1 large orange heirloom tomato, cut into 1⁄4-inch-thick slices
  • 1 large green heirloom tomato, cut into 1⁄4-inch-thick slices
  • 1 large yellow heirloom tomato, cut into 1⁄4-inch-thick slices
  • Salt to taste
  • Ground black pepper to taste
  • Arugula

In a small bowl, combine cream cheese, mayonnaise, dill, and garlic powder. Spread cream cheese mixture evenly over bread slices. Sprinkle both sides of tomato slices with salt and pepper to taste. Layer sliced tomatoes on 4 bread slices. Top each with arugula. Top with remaining bread slices. Serve immediately.
